Broken Wheat/Cracked Wheat/Dalia/Gothuma Rava Vegetable Pancake is a healthy version of a savoury pancake in which the vegetables are overloaded. These healthy and spongy pancakes with 'no baking soda' and 'no fruit salt' is the wholesome breakfast that fills the tummy adding great nutrition to the body.
Broken wheat is fully stacked with fibre and is rich in vitamins and minerals. I never miss stocking up my pantry with Broken wheat as it is part of our regular diet. Be it a sweet dish or savoury dish, the broken wheat always stands unique with a chewy & nutty taste, and this recipe is no new to get joined in the club. The nutritive value of Broken Wheat is enormous and so is the taste of the pancake. Adding loads of vegetables makes this Broken Wheat pancake even more succulent and healthy. Any finely chopped vegetables like carrots, beets, peas, cabbage, capsicum, corn, beans, broccoli or even greens could be loaded into the pancake batter to make it highly nutritive.
The very easy to make, Nutri pancake recipe prepared with no badness included is revealed here. The right taste of the Nutri Pancakes lies in the perfection of how it is made. The outer layer has to be crispy enough, the inside has to be tender enough, and to achieve that, one who makes this has to be patient enough to roast the pancakes to perfection. Yes! you need at least 5 minutes to make a single pancake. But, trust me, your tummy will say stop after one, and your palate would ask for one more or sometimes two more also.
Some Tricks to Roast to Perfection:
- Though veggies can be added directly to the batter, sauteing them for a while enhances the taste. But keep in mind, the veggies have to retain their crunchiness to experience perfection in the Broken wheat Pancakes.
- More veggies and greens into the batter, the more nutrition we get. Finely chop the veggies, and feel free to make the pancakes colourful by overloading the veggies into the batter.
- Each pancake needs a teaspoon of oil or ghee to get the right crispiness on the outside.
- It's worth a shot to wait until the pancake is roasted to perfection. It takes 3 minutes over a low flame to show off the crispy outer layer, and the pancake has to be flipped and cooked again for 2 minutes.
- The particles of Broken wheat takes a pretty good time to get soaked. The reason for blending the broken wheat and Poha is solely to reduce the resting time.
- If the broken wheat and Poha is blended very nicely, the texture would
be missing in the pancakes, and the centre part may turn very sticky.
The coarse particles in the batter pave the way for the best-textured
pancakes. Yup! Blend coarsely.
Which Pan to use?
- If you have a small pan with a diameter of
7-inch or 8-inch, way to go. The shape of the pancakes would be a
flawless circle and the thickness would go even throughout the pancakes.
- I always use my Appam pan which works fine. In this case, the thickness would be more at the centre and the corners would be supposed to turn more crispy. The crispy edges add more taste to the pancakes though the shape has not turned out very perfect.
- You can use your usual Dosa Tawa that also works just fine.
Should I have to blend the Broken Wheat?
- Not necessarily!
- But, blending them into a coarse mixture helps in reducing the resting time of the batter.
- In case, if the broken wheat is added without blending, simply double the resting time.
Can batter be prepared ahead?
- Yes! The batter can be prepared a day before.
- The remaining batter can be stored in the fridge and can be used within a day or two. But I suggest preparing the batter freshly to get nicely roasted crispy pancakes with the right texture.
Which Poha to use?
- Both the thick and thin rice flakes would fit perfectly for the recipe. So, go ahead with what you have in your pantry.

Broken Wheat Vegetable Pancake
The healthy pancakes with crispy outside & soft inside prepared out of Broken Wheat, Poha with veggies overloaded.- Oil - 2 tsp + 1 tsp (for each pancake)
- Ginger Garlic paste - 1 tsp
- Onion - 1/4 cup (finely chopped)
- Carrot - 1/4 cup (finely chopped)
- Beans - 1/4 cup (finely chopped)
- Sweet Corn Kernels - 1/4 cup (cooked)
- Bell peppers - 1/4 cup (finely chopped)
- Green Chilli - 2 (finely chopped)
- Salt - 1/2 tsp
- Red chilli flakes - 1/2 tsp
- Coriander leaves - 2 tbsp (chopped)
- Broken Wheat/Cracked Wheat/Dalia/Gothuma Rava - 1 cup
- Poha/Rice flakes - 3/4 cup
- Salt - 1 tsp
- Curd - 1/4 cup
- Rice flour - 1/3 cup
- Water - 2 cups (or adjust consistency)
- Stir fry all the veggies given under "For Veggies stir fry" for a while along with salt and red chilli flakes.
- Blend coarsely the broken wheat and Poha and transfer them to a mixing bowl.
- Add salt, curd, rice flour and water and mix to get a thick batter.
- Rest the batter for 15 minutes.
- After the resting time, add the stir-fried veggies and give a mix.
- To an appam pan or dosa Tawa or 8-inch heavy-bottomed pan, apply a teaspoon of ghee or oil.
- Add two ladles full of batter, close with a lid and allow to roast for 3 minutes.
- Now, flip over, and roast the other side for two more minutes.
- Serve hot with or without side dips.

Step-by-Step Procedure with Pictures
How to Make?
For Veggies Stir Fry Preparation:
- Add two teaspoons of oil to a pan.
- Add a teaspoon of ginger garlic paste, and saute until the raw smell vanishes.
- Now add finely chopped onions, carrots, beans, bell peppers and cooked corn kernels.
- Add finely chopped green chillies.
- Saute for a while to keep the veggies still crunchy.
- Turn off the flame and add two tablespoons of chopped coriander leaves.
- Mix well and the stir-fry is ready.
For Batter Preparation:
- Add a cup of Broken wheat to a mixer jar.
- Add 3/4 cup of Poha to the same mixer jar.
- Blend coarsely a cup of Broken wheat, and 3/4 cup of Poha into a very coarse mixture.
- Transfer the coarse mixture to a mixing bowl and add salt to it.
- Add a quarter cup of curd into the same mixing bowl.
- Add 1/3 cup of rice flour now.
- Add 2 cups of water to the mixture, and mix well until it forms a thick batter. Add more water if needed.
- The batter should be thick.
- Rest the batter for 15 minutes.
- After the resting time, add in the stir-fried veggies.
- Mix well, and the Broken Wheat Pancake batter is ready now.
For Pancake Preparation:
- Add a teaspoon of oil to the Appam pan and spread it throughout the pan. Instead of an Appam pan, dosa Tawa or any heavy-bottomed 8-inch diameter pan could be used.
- Pour two ladles full of pancake batter into the pan or Tawa and spread gently.
- Close with a lid and allow to roast for 3 minutes.
- Open the lid, flip over the pancake, and roast the other side for another 2 minutes.
- Serve the soft pancakes very hot with or without any side dips.
Tips:
- No matter whatever pan or Tawa you use, make sure to grease the same with a teaspoon of oil or ghee to end up with the crispy brownish outside.
- Chop the veggies very finely and saute them for a while in such a way that they still hold their crunchiness within.
- Add whatever veggies or greens you like, but never forget to add the cooked sweet corn kernels as they add a divinely touch to the pancakes.
