Coriander Rice/ Kothamalli Rice

Coriander or Cilantro leaves are used as a flavoring agent in many International cuisines. In Indian cuisines as well, most recipes stand unfull without the touch of cilantro garnishing. Apart from being a culinary spice, coriander has its own health benefits too.

  • A good anti-inflammatory agent and an anti-oxidant.
  • Appetite inducer.
  • Coriander seeds promote certain enzymes which control blood sugar.
  • Good for heart and skin.
Cooking without coriander leaves let us get a 'missing something' feel, isn't it? Starting from a bowl of soup to a plate of salad, coriander leaves play a major role in almost all the recipes. Just think of making coriander as the main ingredient. Oh my Gosh! How flavorful this Coriander rice would be?

What to Use?

To Grind:
  • Coriander leaves -1 cup, tightly packed
  • Green Chillies - 2
  • Ginger - a small piece
  • Coconut - 2 tbsp
  • Onion -1 medium-sized

To Cook Rice:
  • Rice - 2 cups
  • Water - 5 cups
To Temper:
  • Gingelly oil - 1 tbsp 
  • Mustard seeds - 1/2 tsp
  • Cumin seeds -1/2 tsp
  • Peanut - 1 tbsp (optional)
  • Curry leaves - a sprig

How To Make?
  • Boil rice with water and keep aside.
  • Grind coriander leaves, onion, ginger, coconut and green chillies in a mixer to get a smooth paste.

  • Add oil to a wok and wait till shimmering.
  • Add mustard seeds to the oil and let it pop.
  • Add cumin seeds, peanuts and a sprig of curry leaves to the oil.

  • Now, add the smoothened coriander masala paste and the required salt to the tempered ingredients and stir fry for a minute.

  • It's time to add cooked rice to the masala paste. Mix thoroughly adding a little rice at a time.

  • Hmm.... Flavorful Coriander rice is just ready to be packed.

Tips:
  • Adding peanuts is optional. Though, I prefer adding them. 
  • Adjust green chillies as per your taste.
  • Garnish with fresh coriander leaves to enjoy the flavour of coriander.
