Red Rice Stir-Fry Puttu

Red rice is a powerhouse of nutrients that lends us amazing health benefits. Red Rice stir-fry puttu is a dish made with just one-pan. This needs no steaming pan and of course, no mess with hands. A very healthy and easy to make recipe prepared from parboiled red rice. The rice is roasted, ground and allowed to cook in a pan with little water which is then seasoned with jaggery and freshly shredded coconut.


This recipe yields a coarse puttu which earns a great hit because of its coarse grainy texture. The ghee-roasted nuts and the freshly shredded coconut adds a great aroma to the puttu.

With one pan, and with little effort, this recipe could be a health cum tasty snacks for your kids. As we use whole grain in this recipe, fibre content is well-packed with the stir-fry puttu. Stir-fry yields you an instant puttu that works well while you are in a hurry burry packing for kids.

⌚Preparation Time: 10 minutes

What to Use?
  • Red rice - 1 cup
  • Powdered Jaggery -1/2 cup
  • Water- 1/2 to 3/4 cup
  • Coconut - 2 tbsp
  • Chopped nuts - 1 tbsp

How to Make?
  • Wash the parboiled red rice and start roasting it in a pan.

  • Once it has started to pop, switch off the stove and let it cools down.

  • Transfer the contents to a mixer jar and start grinding the roasted red rice.

  • Now, take a pan, add little ghee and add a tablespoon of chopped nuts to it.

  • To the ghee roasted nuts, add the ground red rice and powdered jaggery.
  • Don't rush up to add water at once. Add water little by a little while stirring the mixture.

  • You could be able to see the puttu consistency when you have finished adding the water.
  • Add some freshly shredded coconut to the puttu and serve.

Tips:
  • Feel free to add extra few tablespoons of water while stirring if you end up with a dry puttu.
  • Season with cardamom powder if you want. I usually skip adding cardamom as red rice with ghee and coconut adds a nice flavour to the puttu.
